Major responsibilities and duties:
ˇ In charge of all the western operations for the food and beverage department
ˇ Oversee the daily operation for seven Western outlets and 13 kitchens; provide a proper training to the employees in terms of nutritional skills, cooking, food hygiene, safety, food cost responsibilities
ˇ Prepare the a la carte menus seasonally, supplying employees with recipes, digital images, samples and training them until achieved the required standard
ˇ Introduce employees to the HACCP program; clarify, make them confident and train them about a more focused approach for producing safety, efficiency and cost savings; organize a daily checking list
ˇ Assist outlets managers to accomplish their duties and training them until achieved the required standard
ˇ Reorganize completely all the production section and banquet department, changing and improving all the basic food preparation, introducing more up to dated way to operate. Improving the banquet menus, preparing a new and diversify package covering all the needs of the clientele
ˇ Planning, organisation and develop step by step of food promotions, food events, cooking classes, Chaines des Rotisseurs
ˇ Organise and develop the Food and Beverage offer for the Apec Summit as Paradise welcomed in its Hotel 7 Country Presidents, plus numerous ministers. Finalize and overlook every single F&B happening at the time in order to achieve the highest standard and to satisfy any single need of these particular guests.
ˇ Oversee the food and beverage operations of the Paradise Hotel in Jeju Island, a 5 stars Relais Chateaux. Responsibility included humans resource issues; service procedures and attitude; cooking, food hygiene and safety advices; menus reviews and development; recipes supplying; on site tours; quality control, special events advices |
