Major responsibilities and duties:

 

· Responsible for all the food operation: 120 seats International restaurant, 60 seats Italian fine dining room, banquets up to 300 people, conference centre, room service, pool side snack restaurant

 

· Preparing and rotating the a la carte and daily menus for all the restaurants

 

· Create all new banquet menu package and a brand new conference offer with a selection of 80 menus consisting in Italian, French, Japanese, Chinese, Northern - Southern Europe and Vegetarian

 

· Full responsible of hiring and training all the staff, labour cost and food cost

 

· Achieved the best food cost ever (2,3 points below budget and 4,5 points below previous year) and best profit margin ever

 

· Responsible for purchasing department, reorganise purchasing list and up to date food and beverage storage database

 

· Introduce all safety and hygienic programs, as per law and HACCP

 

· Creating my own cooking class for hotel guests and local residents
