´´At his domain in the Dorchester Bar he seems to have created a happy confluence with his life dovetailing his life long passion for good honest grub with his natural culinary talents and the results have been highly satisfying, with a cool 50% increase in covers. The recipe he has given us here is very ´´Masterchef´´. It is a good dinner party main dish created by Paolo that is both hearty and satisfying, very rustic, very hearty......and don’t blanch at the idea of using truffles and foie gras´´
